Ingredients:
1 cup rolled oats
2 ripe bananas
¼ cup oat or almond milk
1 egg
1 teaspoon cinnamon powder
½ teaspoon baking powder
½ teaspoon vanilla extract
⅛ teaspoon salt
Steps:
Preheat oven to 350 degrees
Line a baking sheet with baking paper
Mash bananas in a bowl with a fork or potato masher
Mix in milk, eggs and vanilla extract
With a spoon, stir in oats, baking powder, cinnamon and salt
Spoon cookie batter onto baking sheet 2-3 inches apart (1 cookie = 1 heaping tablespoon of batter)
Bake in the oven for 15 minutes until cookie edges are golden brown
