Ingredients:
2 cups almond, coconut or buckwheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3 large bananas (overripe)
1/4-1/3 cup coconut sugar
1/4 cup coconut oil
1/3 cup applesauce
1/2 cup almond milk
1 teaspoon vanilla
1 cup blueberries
Steps:
Preheat oven to 350 degrees
Mash bananas in a large bowl, mixing in coconut sugar, coconut oil, milk, vanilla, and applesauce
In separate bowl, mix dry ingredients (flour, baking powder, baking soda, salt, and cinnamon)
Mix dry ingredients into wet ingredients and add blueberries
Pour batter into lined muffin pan
Bake for 20-25 minutes, until golden brown
Let cool for 10 minutes and enjoy!
