Ingredients:
5 extra ripe bananas
1 egg
1 tsp vanilla extract
1 ½ cups buckwheat flour
1 tsp baking soda
1 tsp cinnamon
Pinch of sea salt (1/8 tsp)
Steps:
Preheat oven to 350 degrees F
Lightly grease a 9x5 inch loaf pan with coconut or avocado oil (alternatively, line pan with parchment paper)
In a mixing bowl, mash bananas using a fork
Add egg and vanilla to bowl and stir
In a separate bowl, mix buckwheat flour, baking soda, cinnamon and sea salt
Stir the dry ingredients into the wet ingredients
Pour mix into the loaf pan and bake for 50-60 minutes, until top is lightly browned
Tips:
Mix dark chocolate chunks or walnuts into the batter
Cut one banana in half (long way) and lay each half on top of the mixture before baking
Enjoy bread toasted with peanut or almond butter
Wrap loaf in plastic and store in the fridge for up to 1 week
