Ingredients:
1 ¼ cup oat flour (or blend rolled oats in blender or food processor until it becomes a fine flour)
¼ cup unsweetened cocoa powder
1 tsp baking powder
¼ tsp baking soda
½ tsp sea salt
½ cup coconut sugar
½ tbsp avocado or coconut oil
1 tbsp vanilla extract
1 medium zucchini (1 cup peeled and grated)
3/4 cup plain yogurt
⅓ cup softened natural almond butter (or preferred nut butter)
Steps:
Preheat oven to 350 degrees and grease 9x5 inch pan with coconut or avocado oil
Combine dry ingredients in mixing bowl
Stir in wet ingredients then pour into baking pan
Bake for 35-40 minutes
Let cool completely before eating
Tips:
Mix in walnuts or dark chocolate chunks
Top with shredded coconut
Store in fridge for up to 1 week
