Ingredients:
1 package frozen cauliflower rice
1 can black beans, rinsed and strained
1 Spanish onion
1 green bell pepper
1 tbsp olive oil
1 tbsp cumin
Jalapeno rings
Optional: salsa, lime, avocado and fresh cilantro to serve
Steps:
Warm olive oil on medium heat in a large pan
Add chopped onion and pepper and cook for 3-4 minutes
In another pan, heat frozen cauliflower rice as directed on package
Add cumin, black beans and diced jalapeno rings to vegetable pan and cook for an additional 3-4 minutes until peppers are tender
Once rice is warm, remove from heat and pour into a large bowl
Pour in sauteed veggies and beans and mix into rice
Time to serve! Spoon into bowls, top with salsa, lime, cilantro and avocado and enjoy!
Tips:
Add hot sauce for extra heat
Add cubed roasted sweet potatoes for more healthy carbohydrates, vitamins, minerals and flavor
