Ingredients:
1 cup instant or rolled oats with 1 cup oat flour (just blend rolled oats in blender or food processor until it becomes a fine flour)
2 extra ripe bananas
½ cup natural peanut or almond butter
Steps:
Preheat oven to 350 degrees and line baking sheet with parchment paper
Mash bananas in mixing bowl with fork
Add oats, oat flour and nut butter to bowl and combine
Spoon dough onto baking sheet, lightly flattening each cookie with the back of the spoon
Bake for 15 minutes and let cool before eating
Tips:
Mix in dark chocolate chunks, coconut flakes or raisins
Store in fridge for up to 1 week
