Ingredients:
1/2 onion
1/2 - 1 bell pepper
1/2 - 1 cup mushrooms
2-3 handfuls kale or spinach
2-4 garlic cloves
1 tbsp olive oil
1/2 - 1 cup beans of your choice (chickpeas, cannellini, black beans)
Steps:
Sauté all veggies except your leafy greens in olive oil & garlic for 5-7 minutes
Add the leafy greens and canned beans and cook for an additional 2-3 minutes
Put in a bowl and enjoy
Tips:
Add herbs/spices of choice! (red pepper flakes, basil, oregano)
