Savory Vegan Breakfast Bowl

Ingredients:

  • 1/2 block firm tofu, crumbled

  • 1 tsp turmeric

  • Pepper

  • Splash soy sauce

  • 1 tsp olive oil (or water)

  • 1-2 big handfuls of kale, de-stemmed and chopped

  • 1/2 - 1 cup sliced mushrooms

  • 1/2 - 1/2 cup diced white onions

  • 1/2 avocado

  • Salsa

  • 1/2 cup cooked brown rice


Steps:

  1. Mix tofu, turmeric, soy sauce, pepper and water in bowl

  2. Heat skillet over medium-high heat and add splash of water or 1/2 tsp olive oil

  3. Add kale, mushrooms, and onions

  4. Cook vegetables for 5-8 minutes, until tender

  5. Remove veggies from pan, placing in bowl

  6. Add tofu mixture to pan and cook for 5 minutes

  7. Top vegetable bowl with tofu scramble along with brown rice, avocado, and salsa

  8. Enjoy!
