Ingredients:
1/2 block firm tofu, crumbled
1 tsp turmeric
Pepper
Splash soy sauce
1 tsp olive oil (or water)
1-2 big handfuls of kale, de-stemmed and chopped
1/2 - 1 cup sliced mushrooms
1/2 - 1/2 cup diced white onions
1/2 avocado
Salsa
1/2 cup cooked brown rice
Steps:
Mix tofu, turmeric, soy sauce, pepper and water in bowl
Heat skillet over medium-high heat and add splash of water or 1/2 tsp olive oil
Add kale, mushrooms, and onions
Cook vegetables for 5-8 minutes, until tender
Remove veggies from pan, placing in bowl
Add tofu mixture to pan and cook for 5 minutes
Top vegetable bowl with tofu scramble along with brown rice, avocado, and salsa
